Having spent time exploring Tokyo in 2019, Luke became obsessed with the idea of pushing the ramen rules to their limit. What started as a wildly successful supper club in his home in Hackney, has since become two hugely popular restaurants in Dalston and Peckham. Supa Ya Ramen brings together Luke’s most innovative collection of recipes, offering an eclectic cooking style that carefully considers each element of a perfect bowl. He shows how to take ramen to a whole new realm of possibilities with inventive flavour combinations including Carbonara-style Mazesoba, Celeriac Chashu and Fried Garlic, Miso Curry Butter Chicken, Spicy Sesame Short-rib Noodles, alongside many more out-of-this-world dishes. Packed with recipes for each key element of ramen – flavoured oils, seasonings, soups, noodles, toppings, pickles and ferments, and even snacks and desserts – Luke shares how you can use traditional ramen-making techniques with flavours you love, to create the perfectly balanced bowl.
