Cooking Fast and Slow is the much anticipated first book from Natalia Rudin, chef and creative behind Nat’s Nourishments (1.4 million followers @natsnourishments).

Tonight Natalia cooks and chats about her trademark simple but big on flavour, low on effort, satisfying, plant packed recipes.

Drawing on her experience as a personal chef, Natalia shares her ability to take a few simple ingredients and elevate them so that every meal feels special and tastes incredible. These recipes are aimed at those who want to eat more plants without cutting out ingredients so, not exclusively vegan (although each recipe can be). Chapters include, speedy recipes for when time is short, Basil, Courgette and Pistachio Pasta, Shawarma Mushroom Flatbreads. But there are also recipes for more relaxed weekend cooking and entertaining, still simple but a little more time required: Pesto Beans and Roasted Tomatoes or Crispy Smashed New Potatoes on Romesco Sauce perfect as part of a barbecue spread. For those on a budget, or, who just want to be more organised, the meal- prep chapter includes ideas to elevate packed lunches, Honey Mustard and Puy Lentil Salad or a Mediterranean ‘Feta’ Couscous Salad. And, of course, the book would not be complete without something to satisfy a sweet tooth, from sophisticated desserts, Roasted Apricots, Cardamom Cream and Pistachio Brittle to a Caramelized Pecan, Chocolate and Banana Bread, perfect with a cup of tea.

Natalia’s recipes are short on ingredients but big on flavour and nutrition, with plenty of suggestions for additions and substitutions to suit what you eat and what you have available. Natalia also shares her store cupboard so that a simple delicious meal is always at hand. In Cooking Fast and Slow, Natalia makes the aspirational achievable and takes cooking with plants to another level so, with this book, we can all make simple food that feels posh, and posh food that feels simple.
